Dear Heart,


Mmmmkay. Important things first. This entire time I have had a gluten sensitivity. Yes girl. This whole time I’ve been going around, walking these streets eating gluten. I cannot even start with how much I feel better. My mood has been more positive, I am not so bloated, I don’t feel sick anymore, and I am not exhausted for no reason at all.

I have seen a lot of changes within my body and I am so incredibly impressed by myself figuring this out. Like holy hell… I am a whole new person.

Okay Corissa. Umm so how is eliminating gluten changing your life so immensely?

Well sis, I thought you’d never ask.

I have created a strict diet that fits my personal needs. I mean I guess I kinda have to tell ya now.

My Morning Menu:

I began by running my a$$ to Target and getting myself a Nutribullet. I had to splurge my cash with this one… However, every morning is now started with a delicious protein shake. 5 frozen strawberries

1/2 frozen banana

1 cup almond milk

1 tablespoon of chia seeds

1 serving plant based protein powder ( I like the vanilla flavor )

blend it bby!

My Afternoon Menu:

So my morning shake usually keeps me full until lunch but I like to eat a small snack to keep my metabolism going strong. I love dried mango slices!

My lunch usually consists of leftovers from dinner or a salad that I make or that I buy from the store. Lately, I have been really picky with my salads so I tend to lean towards a southwest chile lime style.

My Evening Menu:

I like to have fun with this one. Being gluten free has opened a lot of new doors for me. I get really excited about trying new recipes and foods. I prefer to incorporate a lot of proteins into my diet so chicken, fish, or a lean beef is usually my go to entree followed up by vegetables like green beans, potatoes, asparagus, and zucchini. But I will not eat broccoli, cauliflower, or anything relating to the Brassicaceae family because it gives me really bad stomach pain. No thank you.


My Evening x2 Menu (if yanno what I mean):

DESSERT!!! I went to the store recently and hunted down some gluten free and dairy free desserts. And I came home victorious with a whole buncha sh!t. Gluten free brownies, gluten free cookies with oats, coconut milk ice cream, and oat milk mint ice bars. DELISH.


UPDATE PART 2


As if it couldn’t get any better. Mmmkay, I’ll shut up about that.


I started journaling and manifesting for the future that I want to create. I have decided to forget the past and tackle the present so I can get my sh!t together and get ready for the future. I have a lot of things on my list of “to do’s” and I am dedicated to achieving them all.


They have a book for that. haha


I have started reading: “Agent You” by Nicole Lynn. Girlfriend knows what she’s talking about. That’s all I’ll say about that.

Also I start my new job tomorrow at Boise State University as a Digital Content Producer for Student Media and I am excited and nervous. I wish they had one simple word for that feeling. I mean I know I am obviously ready for it, it’s just the thought that a year from now I am going to be starting my life for real and I guess right now is the time for me to make mistakes and prepare for the wild ride that will be my life.
